Citrus Marinated Pork Steaks

  • 4 pork loins, 1 inch thick
  • 90 grams unsalted butter, cut into 8 parts

  • 4 tablespoons lemon pepper, for the marinade
  • 2 tablespoons lime zest, for the marinade
  • 2 tablespoons lemon zest, for the marinade
  • 1 tablespoon olive oil, for the marinade
  • 3 tablespoons lime juice, for the marinade
  • 3 tablespoons lemon juice, for the marinade
  • 90 grams unsalted butter, for the marinade
  • coarse salt, for the marinade

  • In a recipient, mix the marinade ingredients until incorporated and obtain a sauce, let stand for 10 minutes and reserve. Marinate cuts for 20 minutes in refrigerator with 2/3 of the total marinade. Reserve the rest.
  • Prepare your Weber® grill on direct high heat (450º - 550ºF - 232º - 287ºC). In a pot, over medium high heat, cook the reserved marinade, stirring constantly.
  • Transfer the cuts to the grill on direct high heat, 4 to 6 minutes per side or until the internal temperature is 145ºF or 62ºC. Discard the sauce where you marinated the meat and remove the cuts from the grill.
  • To serve, place a piece of butter on the plate, followed by a cut and another piece of butter on the upper part. Let stand 4 minutes.
  • Serve with the rest of the marinade, roasted onions, habanero chile and coriander to taste.
