Acapulco Mushroom Cocktail

Delicious and economical ceviche that preserves all the flavor of the original but by using mushrooms instead of shrimp makes it healthier and cheaper. Serve it as a snack!

  • 800 grams button mushrooms, canned, sliced
  • 20 milligrams fresh cilantro, washed and disinfected
  • 1 onion, medium, finely chopped
  • 2 limes
  • 1 avocado
  • 3 tomatoes, in cubes
  • chipotle chilli sauce, to taste
  • ketchup, to taste
  • salt, to taste
  • 2 tablespoons soy sauce
  • saltine crackers

  • Add to a deep glass bowl: finely chopped mushrooms, onion, and cilantro, and diced tomato.
  • Squeeze the two lemons, add a bit of chipotle sauce or if you prefer finely chopped serrano chili, soy sauce, and ketchup. Taste and season with salt and pepper if necessary, or add a bit more of the ingredient you think is lacking.
  • Finally, cut the avocado into cubes and add it, stir gently so it doesn't get mashed, do it in a folding manner.
  • Serve with crackers or tortilla chips.
