Delicious and economical ceviche that preserves all the flavor of the original but by using mushrooms instead of shrimp makes it healthier and cheaper. Serve it as a snack!
20 milligrams fresh cilantro, washed and disinfected
1 onion, medium, finely chopped
2 limes
1 avocado
3 tomatoes, in cubes
chipotle chilli sauce, to taste
ketchup, to taste
salt, to taste
2 tablespoons soy sauce
saltine crackers

Add to a deep glass bowl: finely chopped mushrooms, onion, and cilantro, and diced tomato.
Squeeze the two lemons, add a bit of chipotle sauce or if you prefer finely chopped serrano chili, soy sauce, and ketchup. Taste and season with salt and pepper if necessary, or add a bit more of the ingredient you think is lacking.
Finally, cut the avocado into cubes and add it, stir gently so it doesn't get mashed, do it in a folding manner.
Serve with crackers or tortilla chips.
