Blend the amaranth until you achieve a fine powder.
Hydrate the yeast with the water and let it rest for 10 minutes.
In a blender, add the ground amaranth, olive oil, salt, previously hydrated yeast, water, and blend for 10 minutes until you obtain a smooth and firm dough. Add the amaranth and blend for 5 more minutes.
Place the dough in a previously greased bowl and let it ferment for 1 hour or until it doubles in volume.
On a floured surface, roll out the dough to a thickness of 2 mm, place it on a round baking sheet.
