Amaranth Gorditas

  • 1 1/4 cups butter, at room temperature
  • 1/2 cups sugar
  • 1 teaspoon vanilla essence
  • 1 egg
  • 1 1/2 cups flour
  • 1 teaspoon cinnamon
  • 1/2 teaspoons salt
  • 1 teaspoon baking powder
  • 3/4 cups amaranth
  • flour, for rolling out

  • In a bowl, add the butter and sugar, beat until creamy.
  • Add the vanilla extract, egg, flour, cinnamon, salt, baking powder, and amaranth, beat until well combined.
  • Place the dough on the table and knead until you obtain a homogeneous and smooth dough.
  • On a floured surface, roll out the dough to about 3 mm thick and use a round cutter to cut out several pieces and set aside.
  • Heat a griddle over low heat and cook the gorditas for 4 minutes on both sides.
  • Serve warm accompanied by a cup of traditional coffee.
