1/2 cups sugar
1 teaspoon vanilla essence
1 egg
1 1/2 cups flour
1 teaspoon cinnamon
1/2 teaspoons salt
1 teaspoon baking powder
3/4 cups amaranth
flour, for rolling out

In a bowl, add the butter and sugar, beat until creamy.
Add the vanilla extract, egg, flour, cinnamon, salt, baking powder, and amaranth, beat until well combined.
Place the dough on the table and knead until you obtain a homogeneous and smooth dough.
On a floured surface, roll out the dough to about 3 mm thick and use a round cutter to cut out several pieces and set aside.
Heat a griddle over low heat and cook the gorditas for 4 minutes on both sides.
Serve warm accompanied by a cup of traditional coffee.
