Amaranth with Coconut Milk

  • 1 cup amaranth, not puffed
  • 2 cups coconut milk
  • 2 tablespoons peanut butter, unsweetened
  • 1 tablespoon vanilla essence
  • 4 dates, finely chopped

  • Soak the amaranth overnight. Drain the water and rinse it well.
  • In a pot, add the coconut milk, vanilla, peanut butter, stevia, and dates.
  • Let it boil and lower the heat; cook for 10 to 15 minutes or until the amaranth is cooked.
  • Serve immediately and sprinkle with cinnamon.
