1 cup amaranth, not puffed
2 cups coconut milk
2 tablespoons peanut butter, unsweetened
1 tablespoon vanilla essence
4 dates, finely chopped

Soak the amaranth overnight. Drain the water and rinse it well.
In a pot, add the coconut milk, vanilla, peanut butter, stevia, and dates.
Let it boil and lower the heat; cook for 10 to 15 minutes or until the amaranth is cooked.
Serve immediately and sprinkle with cinnamon.
