Asparagus Soup with Vegetables and Chicken

  • 1 chayote , washed, peeled, and without the seed from the center
  • 1 apple, peeled
  • 1 pear, peeled
  • 1/2 onions
  • 1 jar asparagus, white or green
  • 1 can chicken breast , in Tuny pieces in water
  • 1 cube chicken soup, Knorr
  • 1 teaspoon garlic pieces Mccormick®
  • 3 tablespoons olive oil
  • 1 tablespoon fresh cilantro
  • 4 1/2 cups water, purified
  • 2 cups cow's milk
  • salt , and pepper to taste

  • We place a pot on the stove with the cups of water, add the chicken broth cube, salt, pepper, cilantro, garlic, and olive oil, and let it boil.
  • We cut all the fruits and vegetables into large pieces, except for the asparagus, add them to the pot, lower the heat, and let it cook for 30 minutes.
  • When everything is cooked, we take the vegetables and fruits out of the pot and put them in the blender along with the water and the asparagus, and blend until we have a smooth mixture without lumps.
  • We pour the blended mixture back into the same pot where we cooked the vegetables, add the 2 cups of milk and the drained can of chicken breast, let it cook on low heat, and when it boils, remove from heat and serve.
