Baked Carrot and Pumpkin Patties with Salad

  • 3 carrots, washed and peeled
  • 3 pumpkins
  • 2 egg whites
  • 1 pinch salt
  • 1 pinch pepper
  • 1 escarole lettuce
  • 100 grams spinach
  • 1 bell pepper
  • 8 figs
  • 150 milliliters olive oil
  • 50 milliliters balsamic vinegar
  • 70 grams honey

  • Oven preheated to 190° C.
  • Cut the carrot and pumpkin into very thin julienne strips.
  • Blanch the carrot and pumpkin in salted water, drain and place in a bowl.
  • Add the egg whites, salt, pepper, and mix until well combined.
  • Form the patties using two tablespoons of the mixture and place them on a baking tray.
  • Bake for 25 minutes.
  • Wash and disinfect the lettuces and baby spinach. Dry them thoroughly to keep them fresh longer. Mix the leaves in a bowl.
  • Cut the bell pepper into thin julienne strips and the figs into slices. Mix all the ingredients and set aside.
  • For the vinaigrette: Mix the olive oil with balsamic vinegar and honey. Serve alongside the salad and the carrot and pumpkin patties.
