Baked Chicken in Foil

This delicious baked chicken in foil has a rich combination of vegetables and is super healthy due to its oven cooking. Your whole family will love it, and it’s super simple.

  • 1 chicken breast, boneless, in strips
  • 1 cup carrot, baby
  • 1/2 cups cherry tomato, in halves
  • 1 cup pumpkin, in slices
  • 3/4 cups asparagus, in quarters
  • 1 cup shiitake mushroom, in slices
  • 1 lemon, in slice
  • 1/4 cups white wine
  • 2 tablespoons olive oil
  • salt
  • pepper
  • parsley, for garnish
  • red onion, in thin strips, for garnish

  • Cut the chicken into 2 cm strips and season with salt and pepper. Set aside.
  • In a bowl, mix the white wine, olive oil, salt, pepper, and basil. Set aside.
  • On baking paper, place the chicken, the vegetables, and add the wine mixture, just two to three tablespoons. Close the aluminum by rolling it all around, forming a little box, and bake for 30 minutes at 180° C.
  • Serve on a flat plate and garnish with parsley leaves and red onion.
