Baked Eggs with Spinach and Tomato

A healthy breakfast of baked eggs with spinach and tomato is a delicious combination of flavors.

  • 100 grams spinach
  • 400 grams tomato, diced
  • 1 teaspoon chile flakes
  • 4 eggs

  • Preheat the oven to 180 °C to 200 °C. Place the spinach in a colander and pour a pot of boiling water over it to wilt the leaves slightly. Squeeze out the excess water and divide among 4 small baking dishes.
  • Mix the tomatoes with chili flakes and a bit of seasoning, then add to the baking dishes with the spinach. Make a well in the center of each, crack an egg, and pour it into the well. Bake for 12-15 minutes or more, depending on how you like your eggs.
