Baked Tomato with Egg and Spinach

Breakfast is the most important meal of the day; what better way to enjoy it than with a tomato? This recipe is as original as it is nutritious, as it will provide you with all the energy you need for your day.

  • 3 tablespoons butter
  • 3 tablespoons flour
  • 1 cup cow's milk
  • 1 pinch nutmeg
  • 4 red beefsteak tomatoes
  • 1 cup spinach
  • 4 eggs
  • 2 tablespoons oregano
  • salt and pepper

  • Preheat the oven to 180°C.
  • In a saucepan, add the butter and cook until melted, then add the flour all at once and cook while stirring. Add the milk, season with nutmeg, salt, and pepper, and let cook until thickened and has a sauce-like consistency. Let cool and set aside.
  • Cut the tomatoes from one end, and with the help of a spoon, hollow out the tomatoes and remove the seeds. Set aside.
  • Place the tomatoes on a baking tray and add 2 tablespoons of béchamel, spinach, and one egg for each tomato, seasoning with oregano, salt, and pepper.
  • Bake for 10 minutes.
