  • 1 banana
  • 1 cup amaranth flour
  • 1/2 cups whole-wheat flour
  • 1/2 cups amaranth
  • 4 tablespoons chia seeds
  • 1 teaspoon cinnamon
  • 2 envelopes Splenda® naturals stevia
  • 2 eggs
  • 1 tablespoon vanilla essence
  • 1 teaspoon baking powder
  • 1 cup low-fat milk, light
  • cooking spray
  • raspberries
  • blueberries
  • peppermint, for decoration

  • chocolate, melted, for decoration

  • In a bowl, use a fork to mash the banana. Set aside
  • Mix the amaranth flour with whole wheat flour, amaranth, chia, cinnamon, and Splenda® Naturals Stevia. Add the eggs, banana, vanilla extract, baking powder, milk, and whisk until combined.
  • Spray a little cooking oil in a skillet heated over medium heat, pour some of the pancake mixture, and cook for 3 minutes on each side.
  • Serve with raspberries, blueberries, and garnish with mint and melted chocolate.
