Bean Taquitos with Cilantro and Broad Bean Hummus

  • 1 cup fava beans, cooked, for the hummus
  • 2 cloves garlic, for the hummus
  • 1/3 onions, for the hummus, chopped
  • 3 tablespoons olive oil, for the hummus
  • 2 tablespoons olive oil
  • 4 tablespoons onion, finely chopped
  • 1 cup black beans, without broth
  • 1/2 cups corn kernels
  • fresh cilantro, finely chopped
  • 10 corn tortillas
  • 1 avocado
  • pinches salt and pepper

  • For the hummus, in a food processor, add the broad beans, garlic clove, onion, olive oil, and season with salt and pepper. Set aside.
  • In a skillet, heat the oil, add the onion, cook until transparent, add the beans, corn kernels, cilantro, and season with salt and pepper.
  • On a tortilla, place a bit of broad bean hummus, add some of the previous mixture, add avocado, and enjoy.
