Bean Tortillas

  • 1 cup black beans, cooked
  • 1/2 bunches epazote
  • 1/2 cups bean broth
  • 1/2 kilos masa dough, nixtamalized
  • 2 tablespoons coconut oil
  • 1 tablespoon salt

  • Add black beans, epazote, and bean broth to the blender, and blend until you achieve a thick puree. Remove from the blender and set aside.
  • In a bowl, add the corn dough, add coconut oil, salt, and the bean puree gradually to avoid losing the consistency of the dough.
  • When the dough is perfectly mixed with the bean puree, form balls of approximately 30 grams. Set aside.
  • With a tortilla press, form the tortillas between two sheets of plastic.
  • Heat a griddle over medium heat and cook the tortillas until they puff up. Serve warm and enjoy.
