Add the flour, oats, baking soda, and salt to a large bowl. Mix well to ensure the baking soda and salt are evenly distributed. Add the remaining ingredients. Mix everything together.
Using a tablespoon, take a portion of the mixture and spread it into small rounds on a pre-greased baking sheet. Shape the edges for better cookie form. Typically, you get 12 cookies per sheet; if you don't want 2 sheets, freeze half of the mixture and bake it another time.
Bake for 10 minutes, or until the cookies start to take on a bit of color. This will yield soft cookies. If you prefer them crunchy, flip the cookies and bake for three more minutes or until the edges look crispy.
