Breakfast Cookies

These delicious cookies have so many healthy and nutritious ingredients that they can be the perfect complement to a glass of milk and a piece of fruit to start a school day.

  • 125 grams whole wheat flour , or spelt flour
  • 150 grams oats, in jumbo flakes
  • 1/2 teaspoons baking soda
  • 1 pinch sea ​​salt
  • 1/2 teaspoons cinnamon powder
  • 100 grams brown sugar
  • 4 tablespoons maple syrup , or agave honey
  • 1 carrot , large or 2 medium carrots, grated
  • 100 milliliters olive oil , or coconut
  • 100 grams dried fruit, chopped (raisins, dates, apricots, mangoes, and/or figs)
  • 100 grams nut , or other chopped seeds
  • 1 tablespoon lime zest, optional

  • Preheat the oven to 180 degrees Celsius.
  • Add the flour, oats, baking soda, and salt to a large bowl. Mix well to ensure the baking soda and salt are evenly distributed. Add the remaining ingredients. Mix everything together.
  • Using a tablespoon, take a portion of the mixture and spread it into small rounds on a pre-greased baking sheet. Shape the edges for better cookie form. Typically, you get 12 cookies per sheet; if you don't want 2 sheets, freeze half of the mixture and bake it another time.
  • Bake for 10 minutes, or until the cookies start to take on a bit of color. This will yield soft cookies. If you prefer them crunchy, flip the cookies and bake for three more minutes or until the edges look crispy.
