These delicious cookies have so many healthy and nutritious ingredients that they can be the perfect complement of a glass of milk and a piece of fruit to start a school day.

Ingredients

  • 125 grams of integral flour or spelled flour
  • 150 grams of oats in jumbo flakes
  • 1/2 teaspoonful of sodium bicarbonate
  • 1 pinch of sea salt
  • 1/2 teaspoonful of cinnamon powder
  • 100 grams of brown sugar
  • 4 spoonfuls of Maple syrup or agave honey
  • 1 carrot large or 2 medium carrots, grated
  • 100 milliliters of olive oil or coconut
  • 100 grams of dried fruit chopped (raisins, dates, apricots, mangoes and / or figs)
  • 100 grams of nut or other chopped seeds
  • 1 tablespoon of lemon zest optional

    Preparation

Preheat the oven to 180 degrees centigrade.
Add the flour, oats, baking soda and salt in a large bowl. Mix well so that the baking soda and salt are distributed evenly. Add the remaining ingredients. Mix everything.
With a soup spoon take a portion of the mixture and spread it into small slices in a baking tray previously greased. Arrange the edges to give cookies a better shape. Normally you get 12 cookies per tray, if you do not want 2 trays, freeze half of the mixture and bake them on another occasion.
Bake for 10 minutes, or until the cookies start to take a little color. In this way we will obtain soft cookies. If you prefer them crispy, turn the cookies over and bake for three minutes or until the edges appear crispy.
