Broccoli and Pasta Muffins

  • 1 cup broccoli, chopped
  • 1/2 onions, finely chopped
  • 1/2 cups Manchego cheese, grated
  • 4 eggs
  • 1 clove garlic, chopped
  • salt , to taste
  • pepper, to taste
  • 1/2 cups elbow pasta, cooked and chopped

  • In a skillet with a little oil, sauté the onion and garlic; once they are translucent, add the broccoli for about 3 minutes.
  • In a bowl, add all the ingredients including what was sautéed in the skillet. Season to taste.
  • Grease the muffin molds and pour in the mixture. Bake for 15 to 18 minutes at 180 degrees.
