330 grams soy, texturized dry
150 grams vegetable shortening
1 onion
3 cloves garlic
4 serrano chiles
2 cubes vegetable consommé
1 bunch parsley
1/4 cups orange juice
salt and pepper

Soak the soy in 2 liters of hot water with 2 bouillon cubes for 30 minutes.
Squeeze the soy well with your hands to remove all excess water.
In a skillet, fry the onion, garlic, parsley, and chopped green chiles in lard until golden, then add the drained soy.
Add the orange juice and fry for another 10 minutes, stirring continuously.
Season with salt and pepper to taste.
