Carnitas with Soy

  • 330 grams soy, texturized dry
  • 150 grams vegetable shortening
  • 1 onion
  • 3 cloves garlic
  • 4 serrano chiles
  • 2 cubes vegetable consommé
  • 1 bunch parsley
  • 1/4 cups orange juice
  • salt and pepper

  • Soak the soy in 2 liters of hot water with 2 bouillon cubes for 30 minutes.
  • Squeeze the soy well with your hands to remove all excess water.
  • In a skillet, fry the onion, garlic, parsley, and chopped green chiles in lard until golden, then add the drained soy.
  • Add the orange juice and fry for another 10 minutes, stirring continuously.
  • Season with salt and pepper to taste.
