Cauliflower Pizza

  • 1 cauliflower, cleaned and in small pieces, dough
  • 1 egg
  • 1 teaspoon salt
  • 1/2 teaspoons pepper
  • 1 cup wheat flour
  • 1/2 cups tomato purée
  • 1 cup cherry tomato, cut in half
  • 1 yellow bell pepper, cut into strips
  • 1/2 cups tofu, for sprinkling
  • 1 tablespoon olive oil
  • 1 pinch oregano
  • 1 pinch salt
  • 1 pinch pepper
  • 10 leaves basil, for garnish

  • Preheat the oven to 180°C.
  • Process the cauliflower in a food processor until it becomes a moderately fine powder.
  • Place the cauliflower in a bowl and dehydrate in the microwave for 4 to 6 minutes on high power.
  • Mix the cauliflower with the egg, salt, pepper, and flour.
  • On a baking sheet lined with parchment paper, roll out the cauliflower dough into a circle. Bake for 20 minutes until golden brown.
  • Remove the cauliflower base and add tomato puree, cherry tomatoes, yellow bell pepper, tofu, olive oil, oregano, salt, and pepper. Garnish with basil.
