Ingredients

6 servings
  • 1 piece of cauliflower clean and in small pieces, dough
  • 1 piece of egg
  • 1 teaspoonful of Salt
  • 1/2 teaspoonful of black pepper
  • 1 Cup of wheat flour
  • 1/2 Cup of tomato puree
  • 1 Cup of cherry tomato cut in half
  • 1 piece of yellow bell pepper cut into strips
  • 1/2 Cup of tofu to sprinkle
  • 1 tablespoon of olive oil
  • 1 pinch of oregano
  • 1 pinch of Salt
  • 1 pinch of black pepper
  • 10 leaves of basil to decorate

    Preparation

    Preheat the oven to 180 ° C.
    Process the cauliflower in a food processor to obtain a moderately fine powder.
    Place the cauliflower in a bowl and dehydrate in the microwave for 4 to 6 minutes at maximum power.
    Mix the cauliflower with the egg, salt, pepper and flour.
    On a tray with waxed paper, spread the cauliflower dough with a rolling pin to form a circle. Bake for 20 minutes until golden brown.
    Remove the cauliflower base and add the tomato puree, the cherry tomatoes, the yellow pepper, the tofu, the olive oil, the oregano, the salt and the pepper. Garnish with basil.

    PRESENTATION

    Serve on a wooden base with chimichurri.

    TIPS

    If you like broccoli more, you can replace it with cauliflower.
