Cauliflower Tortilla with Cilantro

  • 4 cups Eva® cauliflower bits, 454 g
  • 1/4 cups water 1/4 cups water

  • 1/2 cups corn masa flour

  • Pour the Eva® Cauliflower Bits into a pot with hot water. Cook for 4 minutes, drain, and cool under cold running water. Remove excess water with the help of a cotton cloth. Set aside until use.
  • Place the Eva® Cauliflower Bits in a bowl and add garlic powder, Parmesan cheese, corn flour, and cilantro, season with salt and pepper, and mix until combined. Using your hands, form balls of dough and set aside.
  • In a tortilla press, place a plastic sheet and press the ball to form the tortilla.
  • In a skillet over medium heat, cook the tortilla on both sides until slightly golden.
  • Try these tortillas with refried beans.
