Chayote Boats

This chayote boats recipe is a creative way to eat vegetables that everyone will love.

  • 3 chayotes, large
  • 1 can canned tuna in water
  • Manchego cheese, for gratin
  • 1 carrot , in cubes
  • salt , to taste
  • mayonnaise, to taste

  • Cook chayotes.
  • Cut in half, scoop out the pulp and chop.
  • Mix chayote pulp with drained tuna, chopped vegetables, and two tablespoons of mayonnaise.
  • Fill the chayotes with the previous mixture.
  • Grate the manchego cheese and distribute it evenly over all the chayotes.
  • Place in an electric or gas oven at 180°C for 15 minutes or until the cheese is gratinated.
