Chia Cookies with Vegan Avocado Dip

  • 1/2 cups chia seeds
  • 1/4 cups sunflower seeds
  • 1/4 cups pumpkin seeds, toast
  • 2 tablespoons flaxseed
  • 1 cup water
  • 3/4 cups amaranth flour
  • 2 tablespoons canola oil
  • 2 avocados
  • 2 tablespoons spearmint
  • 3 tablespoons olive oil
  • 1 lime
  • salt and pepper

  • Preheat the oven to 160°C.
  • In a bowl, mix all the ingredients so the seeds can hydrate. Let it rest for 30 minutes.
  • Place the dough between two pieces of non-stick plastic with flour and cover with another piece of plastic. Using a rolling pin, roll out to a thickness of 1 mm.
  • Cut squares the size of a cracker, approximately 4 cm x 4 cm, and place on a baking tray. Bake for about 15 to 20 minutes or until golden.
  • For the dip, blend the avocado with mint, olive oil, and lemon juice, season with salt and pepper.
  • Serve the cookies with the dip.
