Chia Pudding with Dates and Mango

Nutritious sweet snack made with chia seeds and almond milk, lightly sweetened with dried dates, served with fresh mango cubes and slivers of toasted almonds. It is the ideal snack to quell midday hunger.

  • 1/4 cups chia seeds
  • 1 cup almond milk, homemade
  • 1 pitted dates, finely chopped
  • 1/2 mangoes, cut into medium cubes
  • 1 tablespoon almonds, sliced, toasted

  • In a bowl, add the chia seeds with the almond milk and finely chopped dates. Mix well to fully hydrate the chia and sweeten with the date. Pour the mixture into your glass jar for carrying, cover with the lid, and set aside in the refrigerator.
  • Remove the pudding from the refrigerator, add the mango and serve the almonds on top. Enjoy.
