Chickpea Burgers with Amaranth

  • 1 1/2 cups chickpeas, Cooked
  • 1 tablespoon dry chicken broth or bouillon
  • 1/4 cups parsley, chopped
  • 1/2 cups onion, chopped
  • 1/4 cups button mushrooms, chopped
  • 1/4 cups bell pepper, chopped
  • 3 cups amaranth, natural
  • vegetable oil

  • Blend the chickpeas with very little water from where they were cooked. Then add the chicken broth powder in the blender and liquefy a little more.
  • In a deep enough container to have all the ingredients chopped and mixed: parsley, onion, mushrooms and pepper; add the chickpea liquefied and mix.
  • Add the amaranth little by little until everything is well incorporated and the dough is manageable, not sticky.
  • Proceed to make the pancakes slightly thick and fry them in very hot oil on both sides, being careful not to break them.
  • Once fried all the pancakes, put together the burgers.
