Chickpea Burgers with Amaranth

  • 1 1/2 cups chickpeas, cooked
  • 1 tablespoon dry chicken broth or bouillon
  • 1/4 cups parsley, chopped
  • 1/2 cups onion, chopped
  • 1/4 cups button mushrooms, chopped
  • 1/4 cups bell pepper, chopped
  • 3 cups amaranth, natural
  • vegetable oil

  • Blend the chickpeas with very little water from where they were cooked. Then add the chicken broth powder to the blender and blend a little more.
  • In a sufficiently deep bowl, have all the chopped and mixed ingredients: parsley, onion, mushrooms, and bell pepper; add the blended chickpeas and mix.
  • Gradually add the amaranth until everything is well incorporated and the dough is manageable, not sticky.
  • Proceed to make slightly thick patties and fry them in very hot oil on both sides, being careful not to break them.
  • Once all the patties are fried, assemble the burgers.
