Chickpea Salad

  • 2 cups chickpeas
  • water
  • salt
  • 1/2 cups cucumber
  • 1/2 cups cherry tomato, in halves
  • 1 lime, for juice
  • 1/4 cups feta cheese
  • 1/2 cups green bell pepper, chopped
  • 1 tablespoon olive oil
  • 1/4 cups black olives
  • salt
  • pepper
  • avocado, for decoration

  • Soak the chickpeas for 24 hours. Then drain, rinse, and cook with water and salt for approximately 30 minutes. Drain again, let cool, and set aside.
  • In a bowl, mix the chickpeas with cucumber, cherry tomatoes, lemon juice, feta cheese, green bell pepper, olive oil, black olives, salt, and pepper.
  • Serve, decorate with avocado, and enjoy.
