Cottage Cheese and Almond Stuffed Apples

  • 4 golden apple
  • 1 cup cottage cheese
  • 1 cup almonds
  • 1/2 kiwis, diced
  • 2 tablespoons oats
  • 1 tablespoon agave syrup
  • raspberries, for garnish
  • peppermint, for garnish

  • On a cutting board, slice one side of the apple to make it easier to remove the flesh, and using a spoon, scoop out the filling until hollowed. Reserve the flesh and remove the seeds from the core of the fruit; cut into small pieces. Set aside.
  • In a bowl, mix the cottage cheese, almonds, kiwi, apple flesh, oats, and agave honey until fully combined and set aside.
  • Stuff the apples with the almond mixture, garnish with raspberries and mint. Enjoy!
