Cous Cous Burritos with Avocado and Kale

  • 1 cup couscous
  • 2 cups water
  • 2 tablespoons olive oil
  • 3 tablespoons red onion, finely chopped
  • 1/4 kale, cut into strips
  • 2 carrots, cut into small cubes
  • 2 tablespoons parsley, finely chopped
  • 2 avocados, cut into wedges
  • 8 flour tortillas, whole grain

  • In a pot, heat the water and add a little salt; when it starts to boil, add the couscous.
  • In a skillet over medium heat, heat the oil and add the onion; add the kale, carrots, couscous, and fresh parsley, seasoning with salt and pepper. Let cool for 5 minutes.
  • Warm the tortillas on a griddle and fill them with the previous mixture; add the avocado.
  • Cut the burritos in half and heat on the grill over medium heat for 1 minute on each side.
  • Serve with a fresh salad.
