Delicious Spinach Empanada

This spinach empanada is a magnificent vegetarian option and tastes delicious.

  • 3 tablespoons olive oil
  • 2 onions, chopped
  • 1 clove garlic, finely chopped
  • 500 grams spinach, raw chopped
  • 2 chives, sliced
  • 1/2 cups Parmesan cheese
  • 1/4 cups Manchego cheese, grated

  • 3 tablespoons pine nuts

  • Preheat the oven to 350ºF. Heat oil and fry the onion for 7 minutes over medium heat, add garlic, green onion, and cook for one more minute.
  • Add the spinach, stir, and add salt. Cook for about 3 more minutes and let cool. Meanwhile, grate the cheese and whisk the 2 eggs, set aside.
  • Then add the eggs and cheese to the spinach, along with the pine nuts, add nutmeg, pepper, and adjust the salt. Stir.
  • Divide the dough into 2 and roll it out on a floured surface to form 2 rectangles of approximately 25 x 30 cm. Place one rectangle of dough on the greased baking tray and put the spinach mixture on top, leaving 2.5 cm free on each side.
  • Brush the edges of the dough with the beaten egg and place the other layer on top, pressing the edges and adjusting it to seal well. Then use a fork to make some incisions to create lines on the sides.
  • Make 4 or 5 small cuts on top of the dough with the tip of a knife so that steam can escape while baking. Brush the entire dough with the egg.
  • Bake for about 40 minutes until golden brown. Remove from the oven, let it rest for about 15 minutes before serving.
