Preheat the oven to 350ºF. Heat oil and fry the onion for 7 minutes over medium heat, add garlic, green onion, and cook for one more minute.
Add the spinach, stir, and add salt. Cook for about 3 more minutes and let cool. Meanwhile, grate the cheese and whisk the 2 eggs, set aside.
Then add the eggs and cheese to the spinach, along with the pine nuts, add nutmeg, pepper, and adjust the salt. Stir.
Divide the dough into 2 and roll it out on a floured surface to form 2 rectangles of approximately 25 x 30 cm. Place one rectangle of dough on the greased baking tray and put the spinach mixture on top, leaving 2.5 cm free on each side.
Brush the edges of the dough with the beaten egg and place the other layer on top, pressing the edges and adjusting it to seal well. Then use a fork to make some incisions to create lines on the sides.
Make 4 or 5 small cuts on top of the dough with the tip of a knife so that steam can escape while baking. Brush the entire dough with the egg.
Bake for about 40 minutes until golden brown. Remove from the oven, let it rest for about 15 minutes before serving.
