Easy Lentil Salad

  • 195 grams lentils, cooked, (equivalent to 1 cup)
  • water

  • 1 cup red onion
  • 1 cucumber
  • 1/2 pineapples
  • 2 serrano chiles
  • 3/4 cups parsley
  • 3/4 cups basil
  • 1 cup cilantro
  • 2 lime juice
  • salt
  • 1 tablespoon olive oil
  • paprika

  • Soak the lentils for 24 hours. Then drain, rinse, and cook them with water and salt for approximately 30 minutes. Drain and let cool. Set aside.
  • Finely chop the cucumber, pineapple, onion, serrano pepper, parsley, basil, and cilantro into small cubes; squeeze the juice of lemon and orange, and season with salt and paprika. Finally, add the olive oil, mix, and enjoy.
