Easy Nopales with Eggs

  • 4 nopales, cooked and cut into strips
  • 4 eggs
  • 1 green bell pepper, cut into strips
  • 1/2 cups onion, sautéed
  • olive oil
  • 1 tablespoon beef broth
  • salt
  • pepper
  • 2 teaspoons epazote, dried

  • In a hot pan over medium heat, add olive oil, sliced onion, bell pepper, nopales, epazote, and the beef broth cube, and mix.
  • Let it cook for 5 to 8 minutes or until the onion and bell pepper are soft and the beef broth cube has dissolved.
  • In a bowl, add the eggs, season with salt and pepper, and beat them. Incorporate this mixture into the nopales in the pan, lower the heat, and mix.
  • Let it cook until the eggs are done, stirring occasionally, and then remove from heat.
