4 nopales, cooked and cut into strips
4 eggs
1 green bell pepper, cut into strips
1/2 cups onion, sautéed
olive oil
1 tablespoon beef broth
salt
pepper
2 teaspoons epazote, dried

In a hot pan over medium heat, add olive oil, sliced onion, bell pepper, nopales, epazote, and the beef broth cube, and mix.
Let it cook for 5 to 8 minutes or until the onion and bell pepper are soft and the beef broth cube has dissolved.
In a bowl, add the eggs, season with salt and pepper, and beat them. Incorporate this mixture into the nopales in the pan, lower the heat, and mix.
Let it cook until the eggs are done, stirring occasionally, and then remove from heat.
