3/4 cups San Juan® egg whites
250 grams Poblano chile strips
300 milliliters sour cream
150 grams Manchego cheese
10 grams salt
5 grams pepper
20 grams butter

Season the egg whites and beat lightly.
Fry the onion, add the strips, then add the cream, and finally, add the grated Manchego cheese. Season with salt and pepper and set aside.
Heat the butter, add a bit of the egg white mixture and cook (being careful not to burn the preparation). Remove from the pan and cut into rectangles.
Fill with strips and roll. Sprinkle with cheese, gratin in the oven. Serve.
