Egg White Omelet with Spinach

  • 2 cups spinach
  • 2 cloves garlic
  • 6 egg whites

  • Heat a large skillet and spray with cooking spray.
  • Sauté the garlic for 1 minute and add the spinach, cook until well done and remove from heat.
  • In a deep bowl, lightly beat the egg whites and season with salt and pepper.
  • Place the egg whites in the hot skillet and let cook for 1 minute.
  • Place the spinach in the middle of the eggs and fold the eggs over them. Flip the omelet to brown the other side for 1 more minute.
