Egg White Omelet with Spinach

2 cloves garlic
6 egg whites

Heat a large skillet and spray with cooking spray.
Sauté the garlic for 1 minute and add the spinach, cook until well done and remove from heat.
In a deep bowl, lightly beat the egg whites and season with salt and pepper.
Place the egg whites in the hot skillet and let cook for 1 minute.
Place the spinach in the middle of the eggs and fold the eggs over them. Flip the omelet to brown the other side for 1 more minute.
