  • 120 milliliters San Juan® egg whites
  • 5 sandwich bread
  • 1 bunch chives
  • 250 grams ricotta cheese
  • 1 can heart of palm
  • 10 grams salt
  • 5 grams white pepper

  • Season the egg whites with salt and pepper and cook in water until firm. Cool and finely chop.
  • Finely chop the green onion, cut the cherry tomatoes into quarters, and slice the hearts of palm. Set aside.
  • Cut the bread with a round metal cutter, bite-sized. Bake for 15 minutes at 180° or until the bread is golden.
  • Place a slice of palm heart on the bread, then add the ricotta cheese on top.
  • Place the egg white on top of the ricotta cheese. Sprinkle with green onion and add half a cherry tomato slice.
