1 cucumber, large in cubes
4 tomatoes, in cubes
1 bunch chives, sliced
2 tablespoons parsley
1 clove garlic, finely chopped
2 tablespoons peppermint, chopped
2 tablespoons fresh cilantro, chopped
5 tablespoons olive oil
2 lime juice
salt, and pepper

Place the cucumber, bell peppers, and tomatoes in the salad bowl. Chop the herbs and add them.
Make a dressing with garlic, lemon, oil, sea salt, and pepper. Mix with the vegetables and serve with toasted pita bread.
