This fattoush salad is delicious and fresh it takes cucumber, tomato, cilantro, pepper and parsley. It is a rich and very healthy recipe.

Ingredients

40 portions
  • 1 yellow bell pepper, in rajas
  • 1 cucumber, big cubed
  • 4 tomatoes, in cubes
  • 1 bouquet chives, sliced
  • 2 tablespoons parsley
  • 1 clove garlic, finely chopped
  • 2 tablespoons peppermint, chopped
  • 2 tablespoons fresh coriander, chopped
  • 5 tablespoons olive oil
  • 2 lemon juice
  • salt, and pepper

Preparation

Put the cucumber, peppers and tomatoes in the salad bowl. Chop the herbs and add them.
Make a dressing with garlic, lemon, oil, sea salt and pepper. Mix with the vegetables and serve with toasted pita bread.
