Fish Fillet with Zucchini

Very simple recipe for fish fillet with zucchini and corn. It is very rich and you will have it ready in no time. This way you can pamper everyone at home. You will like this dish because it is a different way to eat the rich and juicy fish.

  • olive oil
  • 1/2 cloves garlic
  • 1 pinch ground black pepper
  • 2 sprigs fresh cilantro
  • 2 fish fillets
  • 1/2 ears corn
  • 1 zucchini
  • 1/2 leaves bay
  • 1 tomato
  • 1/8 white onions
  • 1 pinch salt

  • Grind the tomato, garlic and onion in the blender.
  • Sauté the sauce in a pan with olive oil for 3 minutes.
  • Add the zucchini, chopped into small cubes, the shelled corn and the bay leaf.
  • Season with salt to taste and continue cooking for 8 more minutes.
  • Season the fish fillets.
  • Seal in a skillet with olive oil over high heat, a couple of minutes on each side.
  • Serve the fish bathed in the sauce, sprinkled with chopped coriander.
