Fish Fillet with Zucchini

  • Blend the tomato, garlic, and onion in a blender.
  • Sauté the sauce in a pan with olive oil for 3 minutes.
  • Add the diced zucchini, corn kernels, and bay leaf.
  • Season with salt to taste and continue cooking for 8 more minutes.
  • Season the fish fillets with salt and pepper.
  • Sear in a pan with olive oil over high heat for a couple of minutes on each side.
  • Serve the fish topped with the sauce, sprinkled with chopped cilantro.
