Very simple recipe of fish fillet with zucchini and corn. It is very rich and you will have it ready in a very short time. This way you can spoil everyone at home. This dish will please you because it is a different way to eat the rich and juicy fish.

Ingredients

2 portions
  • to taste olive oil
  • 1/2 cloves garlic
  • 1 pinch ground black pepper
  • 2 branches fresh coriander
  • 2 Fish fillets
  • 1/2 corn
  • 1 zucchini
  • 1/2 leaves bay (laurel)
  • 1 roma tomato
  • 1/8 white onions
  • 1 pinch salt

Preparation

Grind the tomato, garlic and onion in the blender.
Sauté the sauce in a pan with olive oil for 3 minutes.
Add the chopped zucchini in small cubes, the husked corn and the bay leaf.
Season with salt to taste and continue cooking 8 more minutes.
Season the fish fillets.
Seal in a pan with olive oil over high heat, a couple of minutes on each side.
Serve the fish bathed in the sauce, sprinkled with chopped cilantro.

PRESENTATION

Accompanied by white rice.
