Fish in Light Tomato Sauce

This recipe is very simple and perfect for a beginner in the kitchen. The flavor of tomato sauce goes perfectly with the taste of fish.

  • 1 1/2 tablespoons olive oil
  • cloves garlic, finely sliced
  • 400 grams canned tomato, in its juice
  • 1/4 teaspoons saffron powder
  • 2 tablespoons fresh parsley, chopped

  • Preheat the oven to 210 degrees.
  • Heat 2 teaspoons olive oil in a small saucepan over medium heat and cook for 2 minutes.
  • Add the tomatoes and their juice, the saffron, and a little salt and pepper.
  • Wait for it to boil and lower the heat a little, let it cook for 20 minutes.
  • While the sauce is cooking, varnish the fish fillets with the rest of the olive oil and season well with salt and pepper.
  • Bake the fish in a pyrex until the center is opaque, between 12-25 minutes.
  • Add the parsley to the sauce and season with salt and pepper.
  • Bake the fish with the sauce and serve.
