cloves garlic, finely sliced
400 grams canned tomato, in its juice
1/4 teaspoons saffron powder
2 tablespoons fresh parsley, chopped

Preheat the oven to 210 degrees.
Heat 2 teaspoons olive oil in a small saucepan over medium heat and cook for 2 minutes.
Add the tomatoes and their juice, the saffron, and a little salt and pepper.
Wait for it to boil and lower the heat a little, let it cook for 20 minutes.
While the sauce is cooking, varnish the fish fillets with the rest of the olive oil and season well with salt and pepper.
Bake the fish in a pyrex until the center is opaque, between 12-25 minutes.
Add the parsley to the sauce and season with salt and pepper.
Bake the fish with the sauce and serve.
