Make the pizza dough: In a bowl, dissolve yeast and sugar in hot water until bubbles form, about 10 minutes. In a large bowl, stir together flour, oil, salt, and the yeast mixture. Knead until you have a smooth dough. Place in a greased bowl, cover with a cloth, and let it sit in a warm place until it doubles in size, about 1 hour.
Preheat the oven to 210ºC. Have 2 baking sheets ready, brushed with olive oil.
On a floured surface, roll out the pizza dough into 2 rectangles of 25 x 30 cm. Cut them in half lengthwise and then make perpendicular cuts into strips about 2 cm wide. Tie them into loose knots and place them on the baking sheets, spaced about 2 cm apart. Brush with oil and bake for 20 to 25 minutes until they start to brown, then let cool. In a separate bowl, combine garlic, oil, parsley, salt, and pepper, and brush each roll with this mixture; serve hot.
