Gluten-Free Pizzas

Enjoy all the flavor of pizza with this healthy version made from zucchini. Make it in just a few minutes and give your body a guilt-free treat.

  • 3 zucchinis, large
  • 1 egg
  • 1.5 cups Mozzarella cheese, grated
  • 1 cup tomato sauce
  • white mushrooms
  • cherry tomatoes
  • fresh basil leaves

  • Grate the zucchinis and remove the excess liquid.
  • Place them in a bowl along with the egg, salt and pepper to taste, and grated mozzarella cheese. Mix everything together.
  • Form a sort of tortilla with your hand, flatten it, and place it on a tray or rack. Do the same with the rest.
  • Bake them for 10 minutes at 180°C. After this time, take them out and spread a tablespoon of tomato sauce on each one.
  • Place the mushrooms (previously disinfected and sliced) and the tomatoes in slices on the pizza base.
  • Add a little more grated cheese and fresh basil leaves. Bake for another 20 minutes or until they look golden, being careful not to leave them too long to avoid burning.
  • Serve with fresh basil leaves and a drizzle of olive oil.
