Place them in a bowl along with the egg, salt and pepper to taste, and grated mozzarella cheese. Mix everything together.
Form a sort of tortilla with your hand, flatten it, and place it on a tray or rack. Do the same with the rest.
Bake them for 10 minutes at 180°C. After this time, take them out and spread a tablespoon of tomato sauce on each one.
Place the mushrooms (previously disinfected and sliced) and the tomatoes in slices on the pizza base.
Add a little more grated cheese and fresh basil leaves. Bake for another 20 minutes or until they look golden, being careful not to leave them too long to avoid burning.
Serve with fresh basil leaves and a drizzle of olive oil.
