On a plate, place the panela cheese and add a pinch of each of the dried herbs, season with salt and pepper to taste.
Heat a skillet over high heat with 2 tablespoons of olive oil, when hot, place the cheese upside down, making sure the herbs are in contact with the skillet, cook for 5 minutes.
While the cheese is grilling, on the white side, add the remaining herbs and season again with salt and pepper.
When the crust of the cheese is ready, flip it over and grill for 5 minutes, if oil is lacking, add the remaining 2 tablespoons, then remove from heat.
