1/4 cups green onion, sliced, including the tail, for the filling
1 tablespoon ginger, grated for the filling
1/2 cups carrot, grated for the filling

For the filling, in a bowl mix the ground beef, scallions, ginger, carrot, zucchini, bell pepper, Eva® broccoli bits, cashew nuts, garlic, rice vinegar, soy sauce, sesame oil, brown sugar, cornstarch, and beef broth; season with salt and pepper until fully combined.
In a saucepan over low heat, heat the sesame oil and cook the previous mixture covered for 15 minutes, or until the meat is cooked. Cool and set aside.
For the sauce, mix the soy sauce, sesame oil, serrano chili, and green onion. Set aside.
Place a leaf of Eva® Mini Romaine lettuce, add the ground beef filling, and place another leaf of Eva® Mini Romaine on top, tie with a piece of green onion. Arrange on a flat plate. Garnish with black sesame and candied sesame, and serve with the soy sauce.
