Healthy Poblano Steak Tacos

These healthy poblano steak tacos are an excellent option for dinner, as the recipe contains protein, vegetables, and enough carbohydrates to end your day on a high note. Enjoy these tacos with the great flavor of Bionda®!

  • 500 grams beefsteak, in medium strips
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon garlic powder
  • salt, for seasoning
  • pepper, for seasoning
  • 2 tablespoons avocado oil
  • 1 cup onion, in strips
  • 2 cups Poblano chile strips, clean
  • 1/2 cups corn kernel, yellow, canned, drained
  • 1 cup Bionda® cottage cheese
  • 1 cup spinach, only leaves, for the tortillas
  • 3/4 cups water, for the tortillas
  • 2 cups masa harina, to make tortillas
  • Bionda® cottage cheese, for accompaniment
  • pico de gallo, for accompaniment

  • Place the steak strips in a bowl along with the Worcestershire sauce, garlic powder, and enough salt and pepper, then mix very well until combined. Marinate in the refrigerator for 10 minutes and set aside.
  • Pour the avocado oil into a deep skillet, add the onion, and sauté until it changes to a shiny color. It will be time to add the marinated steak and cook, stirring occasionally, until the meat changes color.
  • Add the poblano strips, yellow corn kernels, and Bionda® Ricotta. Then, adjust the seasoning and cook for 10 more minutes or until the consistency becomes creamy. Remove from heat and keep warm.
  • Prepare the tortillas! Blend the spinach with water and enough salt until well integrated. Pour the blended mixture over the nixtamalized corn flour and mix until you achieve a play-dough-like consistency.
  • Shape your tortillas by taking a portion the size of a ping-pong ball, flatten with a tortilla press, and cook on a hot griddle over medium heat for 3 minutes on each side.
  • Serve the healthy poblano steak tacos, add Bionda® Ricotta to taste and accompany with pico de gallo.
