  • 1 cup water
  • 1 tablespoon vanilla essence
  • 1 cinnamon stick
  • 1 cup brown rice
  • 3 cups coconut milk, or similar without added sugar
  • 1/4 cups coconut sugar
  • 1 tablespoon lime zest, sour
  • 1 tablespoon lemon zest
  • raspberries, for decoration
  • peppermint, for decoration
  • cinnamon powder, for decoration

  • Heat a deep pot with water, vanilla essence, and cinnamon, cook the rice until softened for 15 minutes.
  • Add the coconut milk, sugar, lemon zest, and cook until the rice is well cooked. Let it cool.
