It is made with coconut milk, ideal for lactose intolerant people, this milk has fewer calories than whole milk and instead of white rice, we use brown rice, which contains more fiber than white rice.

Ingredients

6 portions
  • 1 cup Water
  • 1 tablespoon liquid vanilla
  • 1 cinnamon stick
  • 1 cup integral rice
  • 3 cups coconut milk
  • 1/4 cups coconut sugar
  • 1 tablespoon lemon zest, sour
  • 1 tablespoon lemon zest
  • to taste raspberry, to decorate
  • to taste peppermint, to decorate
  • to taste cinnamon powder, to decorate

Preparation

Heat a deep pot with the water, the vanilla essence and the cinnamon, cook the rice to soften it for 15 minutes.
Add the coconut milk, sugar, and lemon zest and cook until the rice is well cooked. Let it cool.
Serve the rice pudding in small glass cups and decorate with raspberries, mint and a sprinkle of cinnamon powder.

PRESENTATION

Serve the rice pudding in glasses and decorate with raspberries, fresh mint and sprinkle a little cinnamon powder.

TIPS

You can use any sweetener of your choice.
