Healthy Tacos

Tacos filled with something different, fresh, and delicious, in addition to being quick.

  • 1/2 kilos carrot
  • 1 cup panela cheese
  • 1 kilo corn tortillas
  • sour cream
  • 3 tomatillos
  • 7 chiles
  • 1/2 onions
  • vegetable oil, as needed
  • water

  • For the sauce: boil the tomatoes and chilies, when ready, blend them with a little water.
  • Slice the onion and sauté it in a pot over medium heat.
  • When the onion is golden, add the blended tomatoes and chilies.
  • We let it boil for 5 minutes and turn off the heat.
  • For the tacos: Grate the carrot to make thin strips.
  • Crumble the panela cheese.
  • In a bowl, we mix the carrot with the panela cheese.
  • We fill the tortillas with the carrot and cheese mixture.
  • We roll them up and use toothpicks to keep them closed.
  • We brown the tacos in a pan with hot oil.
  • We serve the tacos with a bit of cream on top and sauce to taste.
