1/2 kilos carrot
1 cup panela cheese
1 kilo corn tortillas
sour cream
3 tomatillos
7 chiles
1/2 onions
vegetable oil, as needed
water

For the sauce: boil the tomatoes and chilies, when ready, blend them with a little water.
Slice the onion and sauté it in a pot over medium heat.
When the onion is golden, add the blended tomatoes and chilies.
We let it boil for 5 minutes and turn off the heat.
For the tacos: Grate the carrot to make thin strips.
Crumble the panela cheese.
In a bowl, we mix the carrot with the panela cheese.
We fill the tortillas with the carrot and cheese mixture.
We roll them up and use toothpicks to keep them closed.
We brown the tacos in a pan with hot oil.
We serve the tacos with a bit of cream on top and sauce to taste.
