Homemade Vegan Cheese

  • 2 cups cashews
  • 2 tablespoons yeast, nutritional yeast or beer
  • 1/2 cups olive oil
  • 1 tablespoon lime juice

  • To prepare homemade vegan cheese, first heat a pot over medium heat with two cups of water, cook the cashews for 10 minutes, remove from heat, and immerse in cold water, set aside.
  • Blend the cashews with the remaining water. Using a cheesecloth, separate the pulp from the cashew milk.
  • In a bowl, mix the pulp with lemon juice, yeast, and olive oil. Press into a container, refrigerate for 6 hours, and serve.
