Homemade Vegan Cheese

  • 2 cups water
  • 2 cups cashews
  • 2 tablespoons yeast, food or beer
  • 1/2 cups olive oil
  • 1 tablespoon lime juice

  • To prepare homemade vegan cheese, first heat a pot over medium heat with two cups of water, cook the cashews for 10 minutes, remove from heat and dip in cold water, set aside.
  • Blend the nuts with the rest of the water. With cheese cloth, separates the bagasse or residue from cashew milk.
  • In a bowl, mix the bagasse or residue with lemon juice, yeast and olive oil. Compress in a container, refrigerate for 6 hours and serve.
