Individual Vegetable Quiche

These mini quiches resemble muffins and are very nutritious as they contain cheese, egg, and vegetables. They can be decorated with fun shapes for kids using the vegetables.

  • 2 eggs
  • 2 egg yolks
  • 1 1/4 cups whole milk
  • 1/4 cups cornstarch
  • 1 cup sour cream
  • 1 teaspoon salt
  • 1 cup zucchini, grated
  • 1 cup broccoli, chopped
  • 1/4 cups Mozzarella cheese, grated

  • Preheat the oven to 180°C.
  • Place the cornstarch in a deep bowl and gradually add the milk while whisking with a balloon whisk. Add the eggs, cream, and salt, and continue whisking with the balloon whisk.
  • Add the grated zucchini and broccoli to the mixture and finally the cheese.
  • Grease a muffin tray with vegetable spray or a bit of oil.
  • Pour the mixture into the muffin tray and bake for 15 minutes or until the quiches are lightly golden.
  • Remove from the oven, allow to cool for 10 minutes, and use a knife to unmold.
  • Serve hot or freeze and heat for 5-10 minutes when you are ready to serve.
