Cut the surimi into small pieces, grate the cucumber, carrot, and a bit of onion.
Mix everything with the cream in a bowl.
Cut the jícama in half and use a large grater to slice it into very thin pieces.
Place the previously mixed ingredients from the bowl on the thin jícama slices and roll them up like a burrito.
