Lemon Roasted Zucchini

  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon salt, with lemon
  • 1 teaspoon pepper
  • 2 tablespoons cilantro, finely chopped, for garnish

  • On a cutting board, cut the zucchini into medium sticks no longer than 6 centimeters, remembering to trim the ends of each piece and trying to remove the seeds from the zucchini sticks. Repeat until you finish with all the pieces.
  • Preheat the oven to 190 °C.
  • Place the sticks in a bowl, pour in the olive oil, and add garlic powder, lemon salt, and pepper; mix until well combined. Arrange the zucchini sticks on a baking sheet, covering the entire surface. Bake for 20 minutes at 190 °C, stirring occasionally to ensure even cooking of the vegetables. Remove from the oven, serve in a paper cone, and garnish with chopped cilantro and lemon to taste.
